Electric dough sheeter: how to choose the right one for your pastry work
A good electric dough sheeter gives you the same thickness on every batch, keeps going for a full working day and takes the strain out of rolling by hand. Before you choose, check five things: thickness range, sheet width, output, hours of continuous use and accessories.
What a dough sheeter does
It passes the dough between two rollers that close a little at a time until the dough becomes a thin, even sheet. In pastry it is used for puff pastry, rough puff, fondant, marzipan, cookie dough and filo. In savory cooking, for fresh pasta, empanadas and tequeños.
The difference from a rolling pin is not just speed. The sheet comes out the same every time, and that makes the bake even too.
Five things to check before you buy
- Thickness range. The wider it is, the more preparations it covers. Our sheeters go from 7 mm down to 0.1 mm.
- Sheet width. It sets how large a piece you can cover in one pass. The REVO has 37 cm rollers and gives sheets up to 35 cm wide.
- Output. Both sheet around 16 meters of dough per minute, close to 8 kg an hour.
- Continuous use. If you produce every day, look for a machine built for long shifts. Both are designed for more than 8 hours in a row.
- Accessories. With the 3, 5 and 8 mm cutters, the same sheet becomes spaghetti, noodles, tagliatelle or strips for decorating.

Manual or electric
A manual sheeter works for small batches, but it depends on your arm: the thickness changes from one pass to the next and fatigue builds up. An electric sheeter cuts manual effort by 80% and keeps the pace all day, which is why it makes the difference as production grows.
